Here's a recipe from the "things Tom and Kate like to make a lot of and then freeze" Archive. You can certainly halve or quarter it if you are just cooking for a single meal or a few people.
3 lbs lean ground beef
1 lb ground pork
1 lb ground lamb
1 finely chopped medium onion
5 cloves minced garlic
1 cup chopped parsley
1 cup grated parmesan
1 cup bread crumbs
.75 cup toasted pine nuts
3 eggs lightly beaten
Salt and Pepper
Combine all ingredients gently. Form into ~2" diameter meatballs. Bake in the oven for 15-20 min on 375 until cooked through. (You could also fry these, but I don't to keep them a little healthier). Be careful of dripping fat in the oven if you use pans without walls.
These freeze great and make for tasty spaghetti and meatballs, meatball soup, and meatball sandwiches for months to come. Recipe makes ~50 meatballs.
