Pepper and Maple Salmon

- It's hard to part with that much maple syrup, but a very easy and tasty recipe. Might be able to get away with using a little less in the same ratio?

3/4 c maple syrup
1/4 cup soy sauce
4 6 oz salmon filets, skin removed
1/3 cup coarsely ground pepper
1/2 tsp oil

Mix maple syrup and soy sauce in a large ziplock bag. Add salmon and marinate in refrigerator 4-24 hrs, turning occasionally.

Preheat oven to 500 degrees.

Rub oil on a 10" x 10" sheet of aluminum foil

Place pepper on a small plate. Remove salmon from marinade and pat top side only into cracked pepper to coat. Place fillets, pepper side up on foil

Bake on top rack of oven for 7 minutes (syrup may cause fish to smoke while cooking - don't be alarmed). Alternately, grill over hot coals for 3 mins / side. Fish should be medium-rare.
