This has turned into my absolute favorite side dish. Quinoa has a ton of protein and lots of vitamins (especially compared to rice or potatoes) and has a little crunch to it that I really love. This dish is great, quick, and versatile - throw whatever you have around the kitchen in there and it'll be tasty. Good with leftover chicken hunks.
2 T peanut or olive oil
1/2 c chopped onion or leek
1 cup quinoa, rinsed in several changes of water
Salt and pepper to taste
1 3/4 c chicken, beef, or veggie stock (or water as a last resort)
optional
green beans
sliced garlic
any leafy greens - chard, kale, spinach
peeled cubed eggplant
any other veggie, I'd imagine
Place the oil in a deep skillet and heat to medium.
add onions and cook ~5 min or until transparent
add quinoa and cook, stirring, for a good 5 mins
season with salt and pepper and add liquid. Add any optional veggies (except maybe wait a few minutes on the spinach)
cover and cook until the quinioa is tender, about 15 mins. If all liquid has been absorbed and it is still crunchy, add more liquid. If any liquid remains, remove lid, raise heat a bit and cook, stirring until all liquid is evaporated.
